What does your name Impasto 48 mean?
Impasto is the Italian word for dough and the 48 stands for the hours we leave our dough to proof before we use it to make pizzas. This is ‘The secret behind the pizza’ .
What is ‘The secret behind the pizza’?
It’s in our name ‘ Impasto 48’ . We use our secret sourdough recipe for our pizza bases. This gives a crisp light and chewy texture to each pizza. We only use the finest quality natural ingredients in our dough; Flour, Water, Extra Virgin Olive Oil & Salt. We source a lot of our ingredients directly from Italy to keep our pizzas as authentic as possible. For example we use Zero Zero flour that is sourced directly from a small family run mill in Italy. They have been milling flour for 4 generations. The only other secret ingredient for our pizzas is the ‘48’, this is the time we leave our dough to proof. This allows the dough to breath and become light, you’ll notice the difference after your first bite.
Where did you get your pizza oven?
It was handbuilt by a family of pizza experts in Italy , that specialise in the handcrafting of traditional artisan pizza ovens. They merge these traditional Pizza methods with modern technologysuch as our Spitfire gas burner and our rotating oven floor. This ensures every pizza is cooked perfectly.
